Jollof Rice Recipe with Moi Moi - How to Make



Jollof rice recipe is a classic Nigerian rice delicacy cooked in flavorful tomato stew, spiced with seasonings ; this one-pot dish taste really delicious when properly cooked.

Jollof Rice recipe is a staple food in most West African counties  like Ghana. Cameroon, Benin, Senegal, Togo, Sierra Leona, Liberia and the rest. Nigerian and Ghana are always competing on which country makes the best Jollof recipe.

In Nigeria, Jollof rice with chicken is a dish you will find in virtually every party, occasion and events, it's an everyday food in top Restaurants , eateries, bukka, and mama put outlets.

Homemade Jollof rice with beef or chicken stewed with fresh tomatoes is very easy to cook, while the ingredients can be adjusted to taste. How about making a spicy Jollof for the family with my one and only Jollof secret ingredient.

How to Make Jollof Rice Recipe with Mio Mio

Ingredients

·        2 cups of rice

·        1 kg Chicken ( chicken breast or Drumsticks)

·        4 pcs fresh tomatoes

·        6 pcs scotch bonnet pepper

·        2 tablespoons of tomato paste

·        1/4 cup veg oil

·        1 tbsp curry and thyme each

·        2 pcs bay leaves

·        1 medium-size onion

·        2 Knorr cubes seasoning

·        1 sachet Onga seasoning  

·        Salt to taste

Method of Preparation

1.     First and foremost, parboil your rice wash and allow to drain in a sieve, then keep aside ready for use.

2.     Secondly, wash the chicken spice with Knorr cube, onion, curry and thyme, after that, cook to tender. Remove from stock and fry to golden brown, set aside.

3.     Thirdly, wash and slice your onions, tomatoes, and pepper. in a pot bring oil to heat, sauté onion, stir in the fresh tomatoes and pepper, stir fry for 5 minutes add the tomato paste and fry for another 3 minutes. Ensure the tomato stew is dry and doesn't have sour taste.

4.     Next is to add all spices including the bay leaves, add enough quantity of water that you will need to cook the rice; cover the pot and allow boiling.

5.     Finally, stir in the parboiled rice turn to mix properly with your tomato stew, thereafter, cook to tender and the water will dry completely.

At this point your tasty and delicious Jollof rice is ready.
